I managed to squeeze in this week’s meal, albeit a small one, just in the nick of time:

After 9 days of driving over 2,000 miles to see friends, family, and more friends in the Midwest, the only local meal I encountered was in my own kitchen, prepared hastily while unpacking last night. Immediately after pulling into the driveway, I snipped the few salad greens that were illuminated by the still-running headlights. Water was boiled, summer pesto thawed, and I dressed the salad as the pasta cooked.

So – the greens, pesto, and red pepper flakes were from my own garden. The pasta, and ginger and pomagranite dressing were not. It was a small meal – but after 14 hours in the car with a cranky toddler, it seemed quite substantial.
While on vacation, there were many meals that came close. I cooked my heart out for a week straight, but the only local food my family offered up was meat – and I’m a vegan. Still, lots of fresh produce was available and I have many SOLE meal ideas for the weeks to come!
